Production Staff

Job Summary The Production Technician is responsible for operating, monitoring, and maintaining production equipment throughout the noodle manufacturing process. The role ensures efficient machine operation, product quality, food safety, and compliance with production standards from raw material preparation through packaging. Key Responsibilities Machine Operations & Line Safety

• Operate noodle production machinery safely and efficiently.
• Perform machine start-up, shutdown, and routine operational checks.
• Monitor machine performance and report equipment abnormalities.
• Follow lockout/tagout (LOTO) and workplace safety procedures.

Raw Material Feeding & Sanitation

• Prepare and feed raw materials into production equipment according to production schedules.
• Verify raw materials before use and ensure proper handling.
• Maintain cleanliness and sanitation of machines, tools, and work areas.
• Follow GMP, HACCP, and food safety standards.

Process Control & Problem Solving

• Monitor production parameters to ensure consistent product quality.
• Identify process deviations and perform basic troubleshooting.
• Coordinate with Maintenance and Quality Control for equipment or quality issues.
• Minimize production downtime through timely corrective actions.

Mixing (Wheat Flour & Ingredients)

• Measure and mix wheat flour, water, and other ingredients according to approved formulations.
• Ensure accurate weighing and batching of raw materials.
• Monitor mixing consistency and dough quality.

Dough Pressing

• Operate dough pressing equipment to achieve required dough thickness and consistency.
• Monitor dough texture and adjust machine settings as necessary.
• Inspect dough quality throughout the pressing process.

Dough Compounding & Roller Operations

• Operate compounders and roller machines to achieve uniform dough sheets.
• Monitor roller settings and ensure proper dough development.
• Perform routine inspections to maintain consistent product quality.

Talc Dough Application

• Apply food-grade talc or approved anti-sticking agents according to production standards.
• Ensure even application to prevent sticking while maintaining product quality and food safety.
• Monitor product appearance and process consistency.

Dough Rolling & Cutting (Wonton Wrappers)

• Operate rolling and cutting machines to produce wonton wrappers with accurate dimensions and thickness.
• Inspect product size, weight, and appearance during production.
• Remove defective products and report process abnormalities.

Product Packaging

• Pack finished products into 1 kg bags according to company specifications.
• Verify packaging quality, sealing, labeling, coding, and product weight.
• Ensure proper handling and storage of finished products before warehouse transfer.

Qualifications

• High school graduate, vocational graduate, or college level; Technical or Engineering-related courses are an advantage
• Experience in food manufacturing or production operations is preferred
• Basic mechanical aptitude and machine operation skills
• Familiarity with GMP, HACCP, and food safety practices is an advantage
• Physically fit and able to work in a manufacturing environment
• Willing to work shifting schedules and overtime when required
